I am trying to create a day based rule ie do something only on certain days of the week (weekdays) and then another rule to do a slightly different thing on the weekends. However, since ELK doesn't explicitly have a day based rule how are other folks doing this?

You can drive a daily event, just throw a qualifier before adding the specific day or days to the rule.
IE: Whenever time is XX, AND (day of week is ) XX, then YY
IE: Whenever time is XX, AND (day of week is ) XX, then YY
