Dolphin blue vs. white

Looking at Dolphin connectors, and it looks like the blue ones (with gel) are slightly cheaper than the white ones (without gel).   The gel gives some extra protection against corrosion, so is there any reason I should not use blue ones for everything?

I also used the Elk gel filled connectors. Four years in and zero issues.

Go for the gel filled.

You should know that those connectors are not meant to be crimped completely flat. They have little teeth on the inside that you don't want to crush. The correct crimping tool jaws do not close all of the way as to not crush the connector.  I also highly recommend stripping the wires even though the manufacturer says that it is not necessary.

GMP makes a professional tool that can usually be found on Ebay for an affordable price if you wait and watch.
