I know others have done this in the past. I have been successfully using THIS Serial RS232 RS485 RS422 to Fiber Converter to run a remote Expansion Enclosure over fiber. It works well, seems reliable, has good LED indicators letting you know when you have a fiber connection up, and when you have a serial connection up. It also requires an SFP, but I like this as you can chose Singlemode / Multimode & Single ended vs Double ended installs. Furthermore, it appears that the RS232 and RS485 channels are independent - so you can use both at the same time. In my case, I am going to use the RS232 channel for a 54A00-1 Keypad and the RS485 for the console bus.
I did try to extend the serial connection for omnistats, but the implementation is not standard RS232 and does not work with the fiber extender.
