I'm wondering how well they work with large cats that are about 18lbs and like to jump on counters and climb on top of cupboards :-)

Would the cats doing stuff like this set them off?

No, sorry if it was confusing. There is a piece of 'tape' that when pulled out enables the lookdown zone and removes the pet alley. This along with proper positioning on the wall can make it more 'sensitive'. There are no sensitivity settings per se.
