Vitek EH8 vs the rest

I've read numerous threads on security systems, including Dan's (electron) on the Vitek EH8 DVRs. I like the sound of the EH8 (240fps, H264, iphone app), but am a bit of a newbie so don't understand all the in's and out's. Also because the EH8 isn't part of a 'kit' I'm going to have to work out what cameras, etc. to pair with it.

So here's my question. What's the different/advantage of a EH8 plus 8 cameras compared to an off-the-shelf kit at Fry's like this:

I don't see any technical details included (such as recording resolution etc), this usually means its a low quality DVR. Also, most kits come with very low quality cameras, to the point that it's just not worth it if you are serious about security.

You need to figure out what your absolute minimum requirements are before wasting money on these kits (i.e., are you just interested in casually monitoring things remotely, or do you want to be able to use the footage to recognize people, etc.).

With a bit of digging it says that 720x480 up to 60 fps, which sounds pretty reasonable to me (same as EH8?).

I'm looking for something to secure my home, so recognizing people is important. Even if I get a EH8, the cheap guy in me might get bad cameras. Is there a place that sells 'good kits' or are the camera recommendations (low light, dome or bullet cams)?

To do a proper CCTV install, you will either have to do a lot of research, or get a professional involved. Start with this 'Best Practices' video just to see how important good cameras are.
