Do I understand that if you were to bury this in the soil and put, say, 5v potential across the two leads, you would get 0v for dry, 5v for soaking wet, and something in between for something in between?
No you can't bury these in the ground. You would need to use our Watermark Soil Moisture sensor. You can read any soil sensor with DC voltage because it will basically electroplate the electrodes and cause the readings to be incorrect.
