Elk M1 Gold - how do I program stay mode?

Not entirely sure what you're going for... When you arm the system, you have Exit and Stay modes. In Stay mode, Burglar Exterior sensors are always armed but Burglar Interior sensors are not. In Armed Away, everything is armed.
If you're trying to do this programmatically via Rules, then it's right under the Then rules to Arm Automatically in whichever mode you wish to have.
If you're not familiar with the different zone type definitions or the differences between the different arm states, then it'd be worth consulting the manual as it's well documented. The one thing I will point out is that while there are about 8 arm modes, they're mostly similar - away modes arm the interior, stay modes don't; instant modes mean there's no exit delay on any zones; things like Vacation or Stay vs. Night are only differentiated by what you do in the rules.
