I'm a total newbie

What's the absolute minimum I need to get started monitoring temperature?

I was thinking a 1 wire usb adapter
A DS18S20 temperature sensor
Some cat5e cable

Am I missing anything ?

You'll also need some software to monitor the readings but hardware wise you have it. Not sure if you use HomeSeer but there are a couple of plugins that read and display 1-wire readings.

Just reading up on misterhouse, it looks like the serial interface is supported where the usb is not...

Homeseer, while over kill for just this application, has a new free plugin for the HA7E interface. He is also adding support for the DS9490R USB to 1-wire adapter as we speak.
