So I figured on running two conduits to a wall plate, one 2" and another 1".  I ordered a trim ring for them: http://www.discounthomeautomation.com/OEM-4-Gang-Mud-Ring-with-1-2-Inch-Conduit-OEMR421
 
You'd think when they designed that trim they'd have made it so you could go with the conduits on either side.  Nope.  Flip it over and the orientation of the conduits is still the same. Yeah, the picture does show this.  Of course I had them drilled wrong....  
 
It wasn't that much work to just bore new holes.  All done now.  Just have to find an EIGHT GANG wall plate for it. 
 
I'm not yet sure exactly how I plan on having cables enter/exit.  I may do a whole brush opening.  Or I may have a custom one made.
 
But for final inspection that one would work nicely with a set of 8 blank Decora inserts.  There's another one that's quite a lot less expensive though:

The wall port for this has the 2" cables on the outside and the 1" cables in the middle.  It's in the middle locations that I'd prefer to have the network jack connections.  I'll have HDMI, USB and VGA cabling coming up the 2" conduits and do not plan on terminating them at the wall plates.  Just run straight to devices up on the desk next to it.
 
Otherwise I'd just use a blank Decora opening with a 4 or 6 port insert:

But from what I've read online it might be less expensive to get one of this and use just the inserts:

Looking like the 8-gang decora opening plate and then inserts is the likely route I'll take.
