Touch screen double as TV monitor?

I currently have a cheapo LCD TV mounted in my equipment rack in the kitchen.
My wiring closet backs up to the rack.
The signal is slaved to the living room, but I do have local audio control.
The signal is component and L/R audio.
I would like to replace the TV with a touch panel like Hi-Tech is selling on E-bay, but to keep everyone happy, the TV signal needs to be simple to change to. (real simple)
Ideas?
 
I know some of the Xenarc models have a composite video input as well as analog audio. I don't know if they'd work work for you, though as composite is a reduction in picture quality and they are also pretty small (typically a 7" diagonal). You can see 'em at mp3car.com
 
I will use a 15" model, I think, like the ELO ET 15XX.
I imagine everyone keeps their touchscreens up 24/7, so what may work for me is an input to the computer, switched in and out by a hot spot, or something, on the touchscreen.
 
Do you have room for a tuner in the PC? If so, an option would be to use one of the free HTPC applications (such as GBPVR or MediaPortal) to watch TV. They are fairly easy to use (can be customized).
 
I have room yes, but I might re-think the computer I was going to use.
It is an old Dell Dimension 2350 2.2Ghz, 256k ram, 60GB, CD and DVD, old USB 1.0
Real good shape, but probably needs too many upgrades to be economical.
