Hoping for single gang.  Its a wonky countertop situation for undercabinet lighting.  I may ditch the existing dumb switch/outlet and put a standard rocker there.

Does the switch need to be there or do you want to just be able to control the cabinet lights?  I have a scenario in which the switch for the ceiling cans over my breakfast bar was located in a bad hard to reach spot. I had an adjacent switch that controlled a different load so I put a UPB rocker in the the bad location to control the can lights. I put another UPB switch with a rocker on top and 4 buttons on bottom in the adjacent switch. Rocker controls the breakfast bar can lights via a scene and one of the buttons controls the load that the original switch managed. I'm using Simply Automated switches.  In your case if the scenario I just described exists you might consider putting in a UPB plug if the lights are plug in or hard wiring the lighting to a rocker switch.

If the undercabinet lights are plug in, and you want to be able to switch them on and off, I would put a UPB controlled outlet or wire in relay on top of the cabinets, or in the wall at the top or inside, or even in the back wall of the lower cabinets (your particular situation will dictate) and then wire in a UPB switch with no load to use as a link transmitter.
