Would like to have different entry times based on door

I would like to have a 30 second entry delay on away mode for my ELK M1g and no entry delay for all other doors.  I also want no entry delay for all doors when in stay mode.  Is this possible?

Yes.
If I recall, the Elk M1G allows for two different entry delay settings for perimeter sensors. For example, I have a different setting for my garage overhead door than for the other doors.
For your second request, you can arm in "stay instant" mode. This mode may need to be enabled in the elkRP settings.

It's been a while since I deciphered the the Elk manual zone definitions, but if you set your entry door to zone 1 or 2 (burglar entry/exit) and all other doors to zone 3 (burglar perimeter instant) AND use "stay instant," you can get where you want.  I don't think using just  "stay" will work, since then the zone 1 or 2 entry door will arm with a delay in stay mode.
 
One caution:  you probably want to also make sure that the "auto stay, no exit" setting is OFF (or at least know if it is ON), since if it is on, and you arm away without opening the door, the system will default to stay mode (not stay instant), and you will then have a delay on your exit door.
 
From memory, I believe that once a zone with a shorter delay is triggered, even though a longer delay may be acting, the delay time is shortened to whatever zone delay is tripped. I know Honeywell works this way. Can't remember if Elk is same.
 
The biggest thing is look at the Elk chart, as mentioned, and make programming choices accordingly, also considering the armed mode (away, stay, stay instant and night).
