Well said Lou and BSR (and nice explanation!). I really can't see how two outputs vs. 1 tells you anything useful - it could be confusing if both are on if you don't remember which one "wins". And while you can always use a DPDT relay, that's just a status of the voltage, not the valve.
If it were me, I wouldn't consider any options other than 1.) using a single output to control the valve; 2.) either abandon the secondary monitoring desire, or do it with something physical, such as a magnet on the valve indicating position, as suggested above.
Anything else just introduces complications and doesn't add anything of use.
