There are a number of companies which offer this type of solution. I didn't see any pricing information, or more information about the VGA extenders themselves, so it's hard to judge the product line.

If you are thinking about touch screen applications, I would do a search for KVM extenders. I actually need to look them up myself, and see if there are any cheap ones out there.
 
There are a lot of products out there that will extend signals like this. This one seems to have it all in one, but I'd be curious how many cat5e wires it would take. I'm pretty sure they would run out of wires if they tried to send it over 1 wire.

I currently extend VGA, PS1, and Serial control (and could also do sound) over an extender from my server to my touch screen in the kitchen. The touch screen is actually the primary monitor hooked up to the server. I use a Cybex Longview extender to do this. I bought it used off E-Bay for about $100. Like most KLM extenders, it has a switch located at the computer that I can flip and use a local monitor instead of the kitchen monitor. I use this for trouble shooting in the wiring closet where the computer is actually located. This is all extended over a single cat5e wire.

I also extend USB connections over a separate extender and 2nd cat5e wire. I also bought the USB extender on E-Bay, but it was new and only cost about $35. I have four USB ports at the kitchen end of the extender so I can hook up mulitple devices. Currently I use it for a wireless keyboard (and mouse which I don't actually use since the screen is a touch screen).
