is it possible to extend the CAT5 cables using 2 PoE injectors?
No.
Not sure on the POE power drop after 100meters. An injector will not extend the 100 meter limitation of Ethernet.
You could maybe install a combo midspan injector / switch (X2) or use a POE and network media converter to fiber.
