Multiple PoE Injectors For One Camera

I have an IP camera that needs to be connected about 800 feet from the NVR, is it possible to extend the CAT5 cables using 2 PoE injectors?
 
I would run a 300 foot cable from the NVR to the first injector then connect another 300 foot cable from that injector a second injector and then from the second injector to the camera

No.
 
Not sure on the POE power drop after 100meters.  An injector will not extend the 100 meter limitation of Ethernet.
 
You could maybe install a combo midspan injector / switch (X2) or use a POE and network media converter to fiber.

or have a look at the Ubiquiti forum for a long range wireless CCTV solution. 
 
Or run fiber for the 800 feet and use a POE injector at the camera after converting fiber to cat5e/6.  You just need power for the camera, right?  How close is power to the desired camera install location?

The power is about 100 feet from the camera install location
 
There's extenders that can be installed every 100m, which might be an option. There's also the flavor that Pete posted and there's also variations of the theme.
 
You're not going to get POE to go the distance. You may get ethernet to go that far, though the cable won't cert out. Far easier to get ethernet at the distance if you have power to put a injector in the field.
 
Copper to fiber back to copper is going to be significantly more expensive than straight copper. We did this for a large scale project on the railroad and it's not cheap.
