Yeah, so they gave you a router with the service. You may want to get rid of it and just use your own but if it's all working then go with it.
No need for both routers though so you can disconnect the old one also.
By data cable he meant an ethernet cable going straight to the ethernet port on the omni. No need for a crossover anymore, everything is auto-mdi now so even if the omni isn't, the laptop/pc would negotiate.
You are correct. The fiber modem is also a router than then connects to my WiFi (which is also a router) that then connects to my switch. As you mention, it's all working now, so, I'll probably leave that alone.

Regarding connecting a pc directly to the ethernet port on the OmniPro II, what would that accomplish? (I believe) I understand the serial connection is an alternative if let's say ethernet isn't working, but what would the direct ethernet connection accomplish?

when troubleshooting the ethernet connection it would eliminate your house netwrok.

I do not have the install manual, and I do not have a HAI serial cable. (I am a fairly capable homeowner, not the installer). Do you know of a link to the install manual or haver a pdf you can share and any idea where I can get an HAI serial cable? (potentially for my future use)
The cables show up on ebay or you can make one.
I'll see if I can find the diagram

Thank you for the manual!
And thank you for your time looking for a wiring diagram to make the cable.
This is one of the nicest sites for q/a or assistance I've come across.
Everything has been extremely helpful.

Pete provided the pin out in this post:

Here still utilize old Homeseer serial OmniPro software and new Homeseer OmniPro IP software. That said leave a serial cable plugged in.

The posted diagram above is for a UPB serial cable for the UPB PIM.

The serial cable that I use for the OmniPro software and PCA is just three wires (RX, TX and Ground).

IE: Pins 2, 4 and 5 of the RJ-12 port to 2, 3 and 5 of the RS-232 port.

Many many years ago when I had Verizon Fiber installed (FL) I created two networks. One was for the TV's. I bridged one port on the fiber router to another firewall and used that for the Internet. Went back to XFinity when Frontier took over. (Frontier slammed the Verizon account)

For Xfinity (two houses identical) configured with Arris SB 8200's, PFSense firewall, Ruckus Access points and managed L2/L3 switches.

One a similar but different note, has there been any update in the ability to get Automation Studio to customize the Omnitouch 5.7e screen?

Automation Studio always worked with the OmniTouch 5.7e. It is very slow. More graphics make it slower. Here utilize tabletop 7" Intel based touchscreens to run OmniTouch. I have 15 of these running in embedded XP. I can update them with Automation studio. They are fast.

Also working for Omnitouch is the HP Elitepad G2 and the Asus AIO computers.

The small tabletop touchscreens are hardware modded Openpeak touchscreens with Atom CPUs. Replaced the EFI boot bios with a X86 boot bios.

I utilize Homeseer and Home Assistant to manage the OmniPro 2 panel. Works great.
